Soup Season

 This soup is easy peasy, and so effing good.  I like the spice so I usually go totally overboard with the cayenne.

I got this recipe from a friend a couple of years ago, it might be more commonly known as ‘Moroccan Peanut Soup’.  This version has been modified after many meals.

Spicy Peanut Tomato Soup

1 large onion, chopped                                                                                                            3 -4 cloves minced garlic                                                                                                    28oz can crushed tomato’s                                                                                                      1 cup chunky peanut butter (preferably the no-sugar added variety)                                    1 1/2 tsp. cumin                                                                                                                      1 1/2 tsp. cayenne (the more the merrier)                                                                                1 tbsp. chili powder                                                                                                                2 tbsp. white vinegar                                                                                                              2 tbsp. honey                                                                                                                        1/4 cup tomato past                                                                                                                2 cups water                                                                                                                        Salt and pepper to taste

In a large pot cook yer onions and garlic until onions start to appear translucent.  Add the tomato’s + stir, add the peanut butter + stir.  Add everything else, mix it up and let it simmer on low-ish heat for 15-20 minutes, stirring occasionally.  I like to mix it all with a hand-held blender magic wand thing (blender or food processor obviously works too, but those wand blender things are hand-y, get one they’re like 10 bucks). I put a little plain yogurt on top too. fini.
